Vegetarian Recipe – Mushroom Steak and Oatmeal

Vegetarian or not, come over here, this is so nummy. This recipe is vegetarian, so meat eaters may want this with a beef steak, pork, or any other steak. This is not a vegan recipe though, I haven’t gotten there yet unless I’ve filled up on veggies and fruits. Hears! what a concept, vegetables and fruits. You always have to remember the basics if you want to stay healthy, right?

Years ago, for about nine months, I was a vegetarian. I bought a bunch of veggie stuff … veggie sausages, veggie burgers, not knowing what they were actually supposed to be anyway, you get the picture right? I wanted to be a vegetarian for animals. I felt so guilty and I guess I still do, but I eat meat again and I think I shut down that part of me that cares about it. Every now and then I make this dish just because I love it. Actually, the consistency is very meaty. Try it, I think you will like Micky!

“Oatmeal steak and mushrooms”

1 TBL. vegex (like a bouillon cube)

1/2 cup of hot water

1 teaspoon sea salt (yes, if you’re going to be healthy, make it sea salt, smile)

1/2 seasoning of sage or poultry

1 chopped onion

3 TBL. Butter (I always use real butter, the taste cannot be compared)

3 eggs, well beaten

1 can of cream of mushroom soup

2 cans of soup – hot water

1 can of mushrooms (I know, I can ‘hear’ you, canned things are not that healthy)

2 1/4 cup old-fashioned raw oats

Sauté the onions in the butter. Combine everything except the mushroom soup, 2 cans of hot water, and vegex. Mix well. Cover and let stand about 45 minutes. Shape the mixture into small patties and fry them in hot oil until golden brown. (OMG, another unhealthy thing, stop thinking so loud! I can hear you all the way to Hawaii.) Pour some of the soup mix (whatever you didn’t use to make the burgers) into the bottom of a 9×12 baking dish to coat the bottom. Place the patties on top of the mixture and top the rest with the soup mixture.

Bake at 350 degrees for 1 hour.

Yes, you are almost done. Prepare a small salad and some fruit for dessert, set a beautiful table. Hurrah!
